Locally grown garlic bulbs are harvested then heated or “fermented” from one to two months at a constant temperature that causes enzymes and sugars in the garlic to break down naturally- nothing is added.
The cloves inside the paper-thin skins turn into a soft, pitch black and spreadable clove. The flavor becomes a mellow, sweet and addictive essence that can be used to bring a new delicious twist in cooking or eaten straight.
As we continue to create with black garlic, the more we learn to develop spectacular meals, from salads, appetizers, entrees and desserts.
